Smiley Sud's Hot Thai Shredded Chicken Salad


An absolutely delicious spicy Thai salad with all natural ingredients.

The simple poaching of the chicken makes a huge taste difference.
Easy to prepare and cook, it’s a stunner!

INGREDIENTS - Stuff You Need

Dressing Add ALL below ingredients in a jar. Shake well. Taste and adjust as required. It should be a balance of tangy / sweet / salty / with a hint of spice. 
  1 garlic clove - Crushed Add to jar
  1 tbsp cilantro/coriander stems - finely chopped Ditto
  Small pinch of salt Ditto
  1 or 2 teaspoons of sugar Ditto
  2 x tbsp fish sauce Ditto
  3 x tbsp lime juice Ditto
  2 x teaspoons sesame oil Ditto
  1 x teaspoon soy sauce Ditto
  2 x teaspoons finely grated fresh ginger Ditto
  1 1/2 tsp Chilli Garlic Sauce (See Note below) Set dressing  aside
  Chilli, garlic, vinegar and some seasonings so you get lots of extra flavour layers by using it in a dressing, plus it thickens the sauce like mustard does in Western dressings. Or substitute with: sriracha or any hot sauce.  


Poached Chicken - Stuff You Need

Cooking - What You Do

  2 x chicken breast fillets Leave whole
  Take the chicken out of the fridge 30 minutes before cooking. To room temperature
  500 ml of chicken stock Add boiled chicken stock to a pan. 
  3 x garlic cloves, smashed with the flat side of a knife Add to pan
  1 x shallot, peeled and quartered Ditto
  1 x bay leaf Ditto
  2 to 3 sprigs fresh thyme Ditto
  1 1/2 teaspoons fine sea salt Ditto
  Add chicken, put the lid on, let the water come back up to a simmer, then remove from stove. Set aside for 20 minutes (even up to 45 min is fine).  Ditto
  Remove chicken from water and shred with 2 forks, then cool. Set aside


Salad - Stuff You Need

Cooking - What You Do

  1/2 tbsp oil (vegetable, peanut or canola oil) ALL below - Into a Bowl & Toss - WITH 1 x TBS of DRESSING 
  1/2 to 1 tsp birds eye or Thai Chilli - very finely sliced Ditto
  Salt and pepper Ditto
  2 x cups mixed any salad leaves Ditto
  handful of Bean sprouts Ditto
  1 x cup cherry tomatoes , halved Ditto
  1/4 small red onion (Spanish onion), very finely sliced Ditto
  1 x small cucumber , cut horizontally then cut into slices (about 1/3 cup) Ditto
  1/4 cup (32 g) cilantro/coriander leaves , lightly packed Ditto
  1/4 cup (32 g) mint leaves , Ditto


Add the shredded CHICKEN Add the shredded chicken to the bowl


Dress with MOST of the remaining DRESSING Pile onto 2 x plates

  1 tbsp peanuts or CASHEWS (Unsalted), roughly chopped Top the salad
  Extra cilantro/coriander and mint leaves Ditto
  Dress with remaining DRESSING Ditto
