Example of FREE Monthly Recipes - Jalapeno Popper Baked Potatoes
Mexico Joe's Super SpudsBaked potatoes have never tasted this good! Twice baked potatoes, fully loaded with a stunning cream cheese and jalapeno filling.Easy to prepare, not to spicy, they are fantastico!

INGREDIENTS - Stuff You Need |

4 x large baking potatoes | |
Olive oil - drizzle | |
Salt & Pepper - good pinch | |
260 g bacon - cooked and diced | |
160 g cheddar - Grated | |
160 g cream cheese | |
3 x Jalapeno or large green chillies - deseeded and finely diced | |
2 x Tbs butter | |
1/4 teaspoon garlic powder | |
100 ml sour cream | |
1 x Tbs chives or spring onion | |
Step |
COOKING - What You Do |
1 | Stab the potatoes with a fork on all sides - place on a baking tray |
2 | Olive oil - Drizzle over potatoes |
3 | Salt & Pepper - Sprinkle over potatoes |
4 | Put potatoes in the oven (180 degrees) for 60-70 minutes or until golden brown / fork tender - When cooked - remove from oven |
5 | When cool enough - Slice off the tops of the potatoes 3/4 of the way up - scoop out most of the inside (leave the walls sturdy) and put the scoops of filling into a large mixing bowl |
6 | Add cream cheese, butter, garlic powder, jalapenos, most of the cheddar and cooked bacon (save some of the cheddar and bacon for topping) and a pinch of salt & pepper. |
7 | Equally divide the filling in the mixing bowl and put into the empty potatoes - top with remaining cheddar and bacon - put the potatoes back in the oven (220 degrees) for 10 - 15 minutes or until the cheese is crispy |
8 | Serve the potatoes with a good heap of sour cream and sprinkle with chives |
